Mandarin Oriental

Ingredients:
60ml Sipsmith Gin
Large pinch of White Silver Tip Tea
10ml Bramley & Gage Quince Liqueur
5ml Pear Liqueur
10ml Peller Estates Cabernet Franc Icewine
Method:
Combine gin and Silver Tip tea in a mixing glass and allow to infuse for 5 minutes.
This allows the tea to enrich and smooth the gin.
Add the quince, pear and Icewine to a shake, fill with ice, seal and roll (gently rocking the shaker back and forth to chill)
Double strain into a chilled Martini glass and garnish with a slice of fresh pear.
