Lapsang Old Fashioned

60ml Chilled Infusion of Lapsang Souchong
60ml Good Bourbon (Blanton's Single Barrel Special Reserve or similar)
20ml Sweet Vermouth (Antica Formula)
1 Bar Spoon of Honey Syrup (50/50 honey and water)
Sliver of Orange Zest
Prepare the tea - 4 minutes should yield a full bodied, smoky brew. Chill.
Transfer the cool infsion to a mixing glass. Add ice, Vermouth and honey syrup and slowly stir in the Bourbon until chilled.
Strain into an Old Fashioned glass and serve over ice with a twist of orange zest.
