Lost Malawi Caramel Lost Malawi Caramel


This caramel can be used as the top of a Creme Caramel- or over ice-cream or just spooned straight into your mouth- its so good. 
 

 Ingredients:

 

  •  250g caster sugar
  • 375ml water
  • 6g Lost Malawi Tea

 

Method:

Bring the water to near boiling and then pour over the tea. Leave for a few minutes to infuse.

Strain and mix 125ml water with 250g sugar. Dissolve over a low heat then turn heat up and cook for five minutes until it starts to colour. Take it as far as you can without burning to a deep, dark brown colour and then add the remaining water and stir to incorporate. Cook for a further couple of minutes then set aside to cool.
