I watched the master Moriuchi san - one of the most revered tea-masters in Japan- craft this tea with his strong hands one Sunday. This is a precious skill that has been handed down from generation to generation.

 

His tiny garden on the most vertiginous slopes in Shizuoka produces only a few hundred kilos a year.  Quantity is farthest from his mind. 

 

It took him seven hours to make just 200g. 

I have only one word to describe the taste: divine.  Here is a little film I made of his incredibly tender craftsmanship.
