The diaphanous flowers, though delicate, release mountains of flavour.

This pick comes from the "Rumjache" tree; as always, this is a very limited pick and won't be around for long!

A Special Tea

This cherry blossom tea is unique and tastes as described on the page. I always drink it in the afternoon with the feeling that this is a very rare and special tea. I use 6 flowers per ususal cup and make three infusions - first 1min. 10 sec., second 1min. and third 1min. 40 sec. starting with 100 degrees Celsius for the first infusion and then with lower temperatures, as the water cools down, for the second and third.

Tasting Notes

A rich marzipan scent adds to the succulent cherry and vanilla taste, with a light, honeyed sweetness. A delicious infusion to truly savour.

Quantity

Use 0.5g of blossom per 150ml of water.

Temperature

For the optimum infusion use boiling (100°C/212°F) water, although you can experiment with lower water temperatures (try 70°C or 80°C) to extract different tastes.

Time

Infuse for 1 - 3 minutes, tasting regularly.

Infusions

You can infuse these flowers at least three times. With each careful infusion, different subtleties of flavour are revealed.

50p per cup based on 0.5g of tea per 150ml of water and 3 infusions.
